Roasted Tomato Sauce

INGREDIENTS
About 10 anchovy filets in oil (use 2-3 at first to get a taste for your preference)
Salt & pepper to taste
Pinch of red pepper flakes
Olive oil
15 sprigs fresh parsley; also basil and oregano as you like
Minced garlic to taste
2 lbs. fresh tomatoes
DIRECTIONS
1. Slice tomatoes horizontally into thirds; cover the bottom of a baking dish with some of the tomatoes. Lay the number of anchovy filets you plan on using on them; sprinkle with salt, pepper, and red pepper flakes.
2. Repeat another layer of tomatoes. Pour up to 1 cup of olive oil over all. Place in a 400-degree-Fahrenheit preheated oven; bake 20-30 minutes. Pour cooked pasta of your choice over the tomatoes. Sprinkle with chopped parsley, then toss gently.
