Mom's Biscuits

INGREDIENTS


1 3/4 cup all-purpose flour

1/2 tsp. salt

3 tsp. baking powder



DIRECTIONS


1. Combine these, then add 4-6 tbsp. chilled butter, or a combination of both. Cut the butter or shortening into dry ingredients, then finally use your fingers to flatten some of the butter/shortening chunks.


2. Make a well in the center, then add 3/4 cup of milk. Stir the dough until it's fairly free from the sides.


3. Turn the dough onto a lightly-floured board; knead gently and quickly, making 8-10 folds. Roll with a lightly-floured rolling pin, or pat out to desired thickness. Cut with a biscuit cutter dipped in flour - but don't twist the cutter into the dough; rather, push straight down.


4. If desired, brush the tops with melted butter or milk. Bake on an ungreased baking sheet in a 450-degree oven for 12-15 minutes.
